Sabbat culture considers mortal civilization to be corrupt and worthless -- tainted by the machinations of the Elder Servants of the Antediluvians at best, and completely and unwittingly bound to their service at worst.
Civilization itself is a creation of the horrible ancients, and as such, anything that works against it, corrupting it, ruining it, destroying it, is a blow against the dire forces against which the Sabbat is sworn to fight! Most Sabbat work outside civilization, living on the fringe, feeding upon mortals and spreading chaos, violence, and despair into the camp of the enemy. But some work from within, corrupting mortals, twisting them toward nihilism and self-destruction.
Unsophisticated Sabbat are taught to hate humanity. More sophisticated thinkers understand that it is not the weak mortals they despise, but the masterminds behind the scenes that are worthy of their venom. It is a subtle nuance, but the distinction is there.
